Spicy Black Bean Soup

Ingredients

  • 1 pckg Sausage - browned
  • 1 med. onion, finely chopped
  • 4 med. garlic cloves, minced
  • 3 (15 oz.) cans black beans
  • 1 can (14.5 oz) fat-free chicken broth
  • 1 can (10 oz.) Rotel tomatoes w/ green chiles
  • 1 can (11 oz.) yellow corn, drained

Directions

  1. Brown sausage in skillet. Drain.

  2. Coat bottom of large stockpot with cooking spray.

  3. Add onion and garlic, stir frequenly, until onions are soft but not brown (about 5 minutes)

  4. Place one can of beans in blender; add sauteed onion mixture.

  5. Cover and blend on high until smooth, about 30 sec. Pour mixture into stockpot.

  6. Place second can of beans and can of broth in blender and puree until smooth; add to stockpot.

  7. Stir third can of beans (do not puree first), can of Rotel tomatoes, corn and sausage into pot.

  8. Bring to a boil, lower heat to med and simmer 20 – 25 minutes.

  9. Yields about 1 1/2 c of soup per serving.
