Desert Passionfruit and meringe trifle

Ingredients

  • 7-8 passionfruit
  • 4 individual meringe nests crushed
  • 250 g mascarpone
  • 125 g strawberries

Directions

  1. Crush 4 individual meringe nests in a bowl.

  2. Divide among four 250 ml (1cup) capacity serving glasses.

  3. Combine 1/4 cup passionfruit pulp and 250g mascarpone in a bowl. Spoon over the crushed meringe.

  4. Top with 125g straberries, hulled, washed and halved.

  5. Drizzle with extra passiofurit to serve.
