Dunbrody brown bread

Ingredients

  • 300g coarse wholemeal flour
  • 200g plain flour, plus extra to dust
  • 2 tsp bicarbonate of soda
  • 2 x 284ml cartons buttermilk
  • 2 eggs

Directions

  1. Preheat the oven to 190˚C/fan 170˚C/gas 5.

  2. Put all the dry ingredients in a large bowl. Make a well in the centre and add the buttermilk and eggs. Mix together coarsely – the mixture will be very sticky. Tip into a flour-dusted 1 1/2 litre flower pot on a baking tray, or a 900g loaf tin and bake for 1 hour. To test if is cooked, turn out and tap the base of the loaf, there should be a hollow sound when cooked. Serve warm or cold with butter and your favourite jam.
