Shrimp Salad with Cilantro Lime Vinaigrette

Ingredients

  • 4 tbsp olive oil
  • 1lb med shrimp
  • coarse salt/pepper
  • 1/2 small white onion diced small
  • 2 garlic cloves, minced
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne pepper
  • 1/4c fresh lime juice( 2 limes)
  • 1/4c packed fresh cilantro leaves, chopped
  • 1 head bibb or boston lettuce, leaves separated
  • 2 med carrots peeled and shredded

Directions

  1. In a large skillet, heat 2 tsp oil over med-high season shrimp wiht s/p. Add to skillet and cook until opaque throughout 5 min, transfer to a plate.

  2. To skillet add 1 tsp oil and onion and cook stir occasionally until translucent. Add garlic, cumin and cayenne, cook until fragrant 1 min. Remove skillett from heat. Add shrimp toss to combine.

  3. In a medium bowl, whisk together 3 tbsp oil, lime juice and cilantro. Season s/p. Divide lettuce among 4 plates, top with shrimp, carrots, cilantro leaves and drizzle with dressing.
