Grated Zucchini

This is just a general means of preparing zucchini when the regular ways run out.

Ingredients

  • 2 medium zucchini
  • Seasoning
  • 1/2 a chopped onion
  • 2 Tablespoons Vegetable Oil

Directions

  1. Wash and cut the ends off the zucchini. Grate them on the big holes of a box grater onto a kitchen towel. Gather up the towel around the zucchini and twist, so that you squeeze out as much of the water as you can, without losing any of the zucchini.

  2. Heat the oil in a frying pan until shimmering.

  3. Add the chopped onion and saute until transparent, maybe a minute or two.

  4. Then add the grated zucchini and sprinkle seasonings on top of everything, and mine depend on what else I’m serving. Regular pepper and salt work just fine. I also use schezwan peppercorn roasted with salt, Italian herb seasoning, or Mexican seasoning, or Lemon Pepper, or anything with just a little salt in it, too.

  5. Saute, turning often, until it smells done. Depending on how much liquid was still in the zucchini, it can be anywhere from five to ten minutes. But when the onion starts to caramelize just a bit around the edges, the zucchini should be done (and may have reduced in bulk to about two-thirds what it started as).
