Classic Yellow Cake Batter

Use this to make Raspberry cream layer cake.

Ingredients

  • !c unsalted butter
  • 1 3/4 c sugar
  • 4 large eggs + 2 large egg yolks
  • 1 tbsp pure vanilla extract
  • 3 c cake flour spooned and leveled
  • 1 tbsp baking powder
  • 1/2 tsp fine salt
  • 3/4 c buttermilk

Directions

  1. Bring cold ingredients to room temp. butter should be cold enought to hold a thumbprint but still keep its shape.

  2. In large bowl use electric mixer beat 1 c unsalted butter and 1 3/4 c sugar on high until light and fluffy about 6 min.

  3. Beat in 4 large eggs + 2 large egg yolkds, one at a time until combined. Beat in 1 tbsp pure vanilla extract.

  4. In another large bowl whisk together 3 c cake flour (spooned and leveled) 1 tbsp baking powder and 1/2 tsp fine salt.

  5. With mixer on low add 1/3 of flour mixter to butter mixture beating to combine.

  6. Beat in 3/4 c buttermilk, another 1/3 of flour mixture, another 3/4 c buttermilk and remainign flour mixture until just combined. crape down bowl as needed.
