Green Beans with Red Pepper & Onion

Ingredients

  • 2 1/2 lbs green beans, trimmed
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 medium red pepper, finely chopped
  • 1 small onion, finely chopped
  • 1/4 tsp coarsely ground black pepper

Directions

  1. In 12" skillet heat 1" water and 1 tsp salt to boiling over high heat. Add green beans, heat to boiling. Reduce heat to low; simmer, uncovered, 5-10 minutes, until beans are tender-crisp; drain. Wipe skillet dry

  2. In same skillet, heat butter with oil over medium heat until melted and hot. Add red pepper, onion, black pepper and 1/2 tsp salt and cook 10 minutes or until tender and lightly browned.

  3. Return beans to skillet & cook until beans are hot, about 5 minutes.
