Beef Thai Salad

Serves 4 people

Ingredients

  • 400 g rump steak
  • 1/2 tablespoon olive oil
  • 50 g baby spinach leaves
  • 1/2 red capsicum, seeded and finely sliced
  • 2 spring onions, finely sliced
  • 1/4 cup coriander leaves
  • 1 tablespoons chopped mint
  • 1 tablespoons lime juice
  • 1/2 tablespoon fish sauce
  • 1/2 tablespoon soy sauce
  • 1/2 clove garlic, crushed
  • 1/2 red chilli, seeded and chopped

Directions

  1. Heat a fry pan to hot.

  2. Brush meat with oil and cook for 3-4 minutes each side for medium-rare.

  3. Place steaks in a warm place, or cover with foil, and set aside for 5 minutes to rest.

  4. Meanwhile, mix all dressing ingredients in a small bowl.

  5. Slice Meat across the grain into thin strips.

  6. Place beef and remaining ingredients in a larg bowl. Pour dressing over salad, then toss gently and serve immediately.
