Fish Moroccan Snapper Fillets

Ingredients

  • 2 x 200 g snapper fillets
  • 1/2 tablespoon olive oil
  • Freshly ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cardamon
  • 1/2 teaspoon ground cinnamon
  • 1 clove garlic, chopped
  • 1/4 cup corriander leaves
  • 1/2 cup flat-leaf parsley chopped
  • Juice and finely grated lemon zest

Directions

  1. Preheat oven to 180C.

  2. Pat fish dry with paper towel. Brush with half the oil and season with pepper.

  3. Arrange fish in a single leyer in a baking dish.

  4. In a bowl, mix remaining ingredients to a loose paste. Spread paste evenly over top of fish.

  5. Seal baking dish with foil. Bake for 10-15 minutes, or unitl cooked. when cooked, the flesh will flacke away easily when pressed witha fork. Serve with vegetables or salad.
