Fish baked snapper with basil, capers, tomato

Ingredients

  • 2 x tablespoons olive oil
  • 1 clove garlic
  • 1/2 red chilli, finely chopped
  • 3 spring onions, flinely sliced
  • 1/4 cup roughly chopped basil
  • 1 tablespoon dried oregano
  • 2 tablespoons capers
  • 1/4 cup white wine
  • 4 tomatoes, seeded and roughly chopped
  • 2 x 2oog snapper fillets

Directions

  1. Heat half the oil in a small saucepan over medium heat. Add garlic, chilli and spring onion and cook, stirring until garlic is golden.

  2. Reduce heat to medum – low, then add herbs, capers and wine and cook, stiring occasionally for 5 minutes.

  3. Remove from heat and stir through chopped tomato.

  4. Heat a large non stick frying pan over hi gh heat. Brush fish with remaining oil and sear each side for 2 minutes. Transfer to an ovenproof baking dish and spoon sauce over fish. Bake for 6-8 minutes, or until cooked. Serve with green salad or vegetables.
