Ham, Egg and Gruyere Toast With Green Beans

Ingredients

  • 1 1 pound microwaveable bag frozen green beans
  • 2 teaspoons olive oil
  • 1 teaspoon red wine vinegar
  • 1/4 cup chopped walnuts
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 thick slices whole-grain bread
  • 8 thin slices low sodium deli ham
  • 1/4 pound Gruyere, grated
  • cooking spray
  • 4 large eggs
  • 4 teaspoons jarred basil pesto

Directions

  1. Preheat broiler to high and position oven rack in the center of the oven. Microwave green beans according to package directions, drain, and transfer to a large bowl. Add oil, vinegar, walnuts, salt, and pepper; toss to coat and set aside.

  2. Meanwhile, place bread on a rimmed baking sheet and broil 1 minutes per side until lightly browned. Remove bread from oven and top evenly with ham and cheese. Return to oven and broil about 1 minutes more or until cheese is melted.

  3. Coat a large skillet with cooking spray and heat over medium law. When skillet is hot, crack eggs into it, keeping yolks intact. Cook for 2 to 4 minutes or until whites are set and yolks reach desired doneness. Gently slide an egg onto each otast and rizzle evenly with pesto. Serve with green beans on the side.
