Penne with Classic Bolognese Sauce

Ingredients

  • 1 lb ground beef, pork and veal mix or extra-lean ground beef
  • Cracked black pepper
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • 2 pinches allspice
  • 1/2 medium Spanish onion
  • 1 cup canned low-sodium, no-fat beef broth
  • 1/3 cup red wine
  • 1 can (28 oz) crushed tomatoes
  • Palmful of fresh flat-leaf parsley
  • 1 lb penne or rigatoni
  • Grated Parmesan

Directions

  1. Brown meat, seasoned with black pepper, in a deep skillet over medium high heat.

  2. Add garlic, crushed red pepper and allspice.

  3. Grate the onion, using a handheld grater, directly into the pan.

  4. Cook another 3-5 minutes to soften onion.

  5. Add broth and wine.

  6. Give the pan a good shake.

  7. Scrape up any good bits from the bottom of the pan.

  8. Add tomatoes and parsley.

  9. Give the pan another good shake.

  10. Reduce heat to low and simmer while you cook the pasta.

  11. Toss with pasta .
