Creamy shells with tuna and spinach

Ingredients

  • 3 tbsp olive oil
  • 1 small yellow onion diced small
  • 1/4 c flour spooned and leveled
  • 4 c whole milk
  • coarse s/p
  • 1 hamburger bun torn into large pieces
  • 1/4 c grate parmesan
  • 1/2 tsp italian seasoning
  • 1/2 tsp red pepper flakes
  • 1 pck 10 oz frozen chopped spinach thawed and excess liquid squeezed out
  • 2 cans 6 oz light tuna in water drained flaked
  • 6 oz jumbo pasta shells cooked per package

Directions

  1. eheat oven 375. In med pot heat oil over med high. Add onion cook until softened about 6 min. Add flour and cook stirring occasionally. Gradually add milk, whisking constantly and cook until slightly thickened and bubbling, abt 3 min. Season s/p and let sauce cool slightly.

  2. In food processor combine bun parmesan, italian seasoning and red pepper flakes. process until fine crumbs form. Transfer half mixture to a large bowl combine with spinach tuna and half the sauce season s/p. Fill each shell with 2 heaping tbsp spinach mix and place in baking dish. top with remaining sauce and breadcrumb mix. Bank until sauce is bubbling and crumbs are golden about 20 min.
