Chicken Cordon Bleu the Right Way

none of that cream of mushroom and rice crap, just chicken, ham and swiss, fried chicken style

Serves 6 people

Ingredients

  • 6 boneless skinless chicken breast halves
  • 6 slices ham
  • 6 slices Swiss cheese
  • 3/4 cup breadcrumbs
  • 1 tsp. paprika
  • 1/4 cup plus 2 Tbsps. unsalted butter, melted
  • toothpicks

Directions

  1. Preheat oven to temperature 350°F. Place chicken breast between 2 pieces of waxed paper or plastic wrap and pound with a mallet or other heavy flat object to a thickness of about 1/4 inch. Place a slice of ham and cheese on each (if necessary, cut the slices to fit). Roll up each chicken breast, fastening with toothpicks. Combine breadcrumbs with paprika and salt and pepper to taste in a shallow bowl. Dip chicken bundles into melted butter, then roll in seasoned breadcrumbs. Arrange in a well oiled baking dish. Bake 40-45 minutes until golden and cooked through.
