Mexican Style Chicken Casserole

Ingredients

  • 3-4 checken breasts, cooked and shredded
  • 1/2 lb cheddar cheese, shredded
  • 4 TBSP butter
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 1/2 TBSP chili powder
  • garlic powder, to taste
  • salt, to taste
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Rotel tomatoes & green chilies
  • soft tortillas

Directions

  1. Saute in butter, onion and bell pepper. Add chili powder, garlic powder and salt. Add soups, Rotel and chicken. Simmer 15-20 minutes.

  2. In 9X13 inch pan, place layer of cut-up tortillas, layer of meat sauce and layer of cheese. Repeat about 3 times.

  3. Bake about 20-30 minutes or until cheese is bubbling.
