Turkey Enchiladas

Serves 8 people

Ingredients

  • 1 4 oz. can green chilies
  • 1 clove garlic, minced
  • 4 med. tomatoes, chopped
  • 1/2 teas. oregano
  • 2 Tbsp. cooking oil
  • 1 onion, chopped
  • 1 teas. salt
  • 1/2 c. water
  • 3 c. finely chopped cooked turkey
  • 2 c. sour cream
  • 2 c. grated cheddar cheese
  • 16 - 18 corn tortillas

Directions

  1. Drain chiles, rinse seeds away and chop.

  2. Heat oil in skillet and saute chiles with garlic and onion.

  3. Stir in tomatoes, salt, oregano and water.

  4. Simmer, uncovered, about 15 minutes or until slightly thickened.

  5. Set aside, but keep warm.

  6. Combine turkey with sour cream and cheese. Fill tortillas with turkey mixture, roll up and arrance in shallow baking pan. Heat in 350 deg. oven about 20 minutes or until hot and bubbly. Serve with chile tomatoe sauce.
