Chicken with a cream tarragon sauce

Ingredients

  • 2 chicken breasts
  • oil, for frying
  • knob of butter, for frying
  • 1 shallot, chopped
  • 1 garlic clove, chopped
  • 2 handfuls chopped tarragon
  • 4 tbsp crème fraîche
  • cooked pasta, to serve

Directions

  1. Pan-fry the chicken breasts in the oil and butter until golden all over. Cover an cook gently until tender. Push the chicken aside and add the shallot and garlic and cook until soft. Add the tarragon and crème fraîche and bubble for 1 minute. Serve with cooked pasta.
