Chicken saltimbocca with lemon butter

Ingredients

  • 1 chicken breast
  • slice of Parma ham
  • sage leaf
  • flour, for dusting
  • olive oil, for frying
  • juice of 1 lemon
  • big knob of butter, for frying
  • lemon zest, to garnish

Directions

  1. Take the chicken breast and bat out between two sheets of cling film until about half as thick. Top with the Parma ham. Stitch on a sage leaf with a cocktail stick. Dust with flour and season. Pan-fry in the olive oil on both sides until tender. Add the lemon juice and the butter and give it a quick sizzle. Garnish with the lemon zest.
