Ravioli with Summer Squash

Serves 4 people

Ingredients

  • 1 (9oz) pkg cheese ravioli
  • 1 1/2 c zucchini, julienne-cut
  • 1 medium red bell pepper, chopped
  • 1/2 tsp basil
  • 1/8 tsp pepper
  • 2 tbsp oil
  • 1 1/2 c yellow summer squash, julienne-cut
  • 1/2 c sliced green onions
  • 1/4 tsp salt
  • 2 oz (1/2 c) shredded mozzarella

Directions

  1. Cook ravioli to desired doneness

  2. Drain, rinse with hot water, set aside

  3. Heat oil in large skilled over medium-high heat

  4. Add zucchini, squash, pepper, onion & garlic

  5. Cook & stir 3-5 minutes or until crisp-tender

  6. Add basil, salt & pepper & ravioli

  7. Cook an additional 3-5 minutes until thoroughly heated, stirring occasionally

  8. Sprinkle with cheese
