Stuffed Peppers

Serves 4 people

Ingredients

  • 4 medium peppers
  • 1 lb ground beef
  • 1/2 c onion, chopped
  • 1/2 tsp garlic powder
  • 1 tsp italian seasoning
  • salt & pepper
  • 1 16 oz can stewed tomatoes
  • 1 8 oz can tomato sauce
  • 1/4 c water
  • 1 c instant rice
  • 2 oz mozzarella cheese

Directions

  1. Parboil peppers 5 minutes

  2. Saute beef & onion in large skillet

  3. Add garlic powder, seasoning, salt & pepper, tomatoes and 1/2 can tomato sacue, water & rice

  4. Bring to boil, reduce to low & cook covered 15 minutes.

  5. Stuff peppers, cover with remaining sauce, cover & bake at 350’ for 30 minutes

  6. Uncover, top with cheese and cook 10 minutes
