Pizza Pockets

Ingredients

  • 3/4 lb italian sausage
  • 1/3 c tomato sauce
  • 2 cans (10oz) refrigerated pizza crust
  • 3 c fresh or frozen vegetables (broccoli florets, onion wedges & red pepper)
  • 4 oz mozzarella cheese

Directions

  1. In large skillet over medium-high heat, place sausages and 1/4 c water. Cover & simmer 15 minutes, turning until browned; remove & slice

  2. In 1 tbsp of drippings, saute vegetables 3 minutes

  3. Add sausage & tomato sauce

  4. Preheat oven to 400’

  5. Meanwhile divide each roll of pizza crust in half

  6. On lightly floured surface, with floured rolling pin, roll each piece of dough into an 8" circle

  7. Evenly divide sausage mixture among halves of rounds to within 1 1/2" of edges

  8. Sprinkle cheese overtop

  9. Fold dough over filling

  10. Turn edges up & over & firmly seal

  11. Place on baking sheet

  12. Slit top of pizza pocket to allow steam to escape

  13. Bake 15 minutes until heated through & golden brown
