Fresh Tomato Sauce

Ingredients

  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 c fresh basil, chopped
  • 1/4 tsp pepper
  • 1 c onion, finely chopped
  • 5 1/2 c tomatoes, seeded & chopped (about 3 lbs)
  • 1/2 tsp salt

Directions

  1. Heat oil in large non-stick skillet over medium heat. Add onion & garlic, saute 3 minutes or until tender

  2. Add tomatoes & remaining ingredients & bring to boil

  3. Reduce heat to medium-low & cook, uncovered, for 10 minutes until reduced to 4 c, stirring occasionally

  4. Serve over pasta

  5. Makes 4 cups
