Microwave Fish Almandine

Serves 4 people

Ingredients

  • 1/4 c butter
  • 1/4 c slivered almonds
  • 2 tsp lemon juice
  • 1 lb fish fillets
  • 2 tbsp white wine

Directions

  1. Place butter in 1 1/2 qt microwave-safe dish

  2. Microwave on high for 1 minute or until melted.

  3. Arrange fish in dish with thickest part to outside edges. Cover with plastic wrap

  4. Microwave on high for 6-8 minutes or until fish flakes easily with a fork, rotating dish 1/2 way through cooking

  5. Transfer fish to serving platter

  6. Add almonds & lemon juice to pan drippings

  7. Microwave on high for 1 minute or until thoroughly heated

  8. Pour over fish
