Italian Sausage & Tortellini Soup

Ingredients

  • 1 lb sweet italian sausage
  • 2 large garlic cloves
  • 2 c tomatoes chopped (approx 3/4 lb)
  • 1 large zucchini, sliced
  • 1 medium size bell pepper, diced
  • 1 tbsp basil
  • 8-10 oz fresh cheese tortellini
  • 1 c chopped onion
  • 5 c beef broth
  • 1 8oz can tomato sauce
  • 2 large carrots, thinly sliced
  • 1/2 dry red wine
  • 1 tbsp oregano
  • parmesan cheese

Directions

  1. Remove casing from sausage & saute in dutch oven over medium-high heat until cooked through, crumbling with back of spoon (about 10 minutes)

  2. Transfer to large bowl

  3. Pour off all but 1 tbsp drippings

  4. Add onion & garlic and saute until translucent (about 5 minutes)

  5. Return sausage to dutch oven. Add remaining ingredients except tortellini & parmesan

  6. Simmer until vegetables are tender (40 minutes)

  7. (Can be prepared 2 days ahead, cover & refrigerate, bring to simmer before continuing.)

  8. Add tortellini & cook until tender (about 8 minutes.)

  9. Season with salt & pepper & serve with parmesan cheese
