Crisp green salad

Ingredients

  • 1 tbsp red wine vinegar
  • 3 tbsp extra-virgin olive oil
  • 1 romaine lettuce

Directions

  1. Put the vinegar and olive oil into a jar, add a pinch of salt and freshly ground black pepper. Screw on the lid and shake to mix.

  2. Break the leaves into bite-sized pieces and put into a colander. Rinse the lettuce in the colander under cold running water, shake of excess water and pat dry with kitchen paper. Put into serving bowls and drizzle with a splash of dressing on each, just before eating.
