gluten free pepperoni pizza zucchini bake

  • I love pizza, as well as zucchini. I have found that all of the Italian flavors in pizza goes very nicely on zucchini. I decided to combine my two loves, and this dish was born! This dish is a great low calorie side dish that is packed with fiber, and fla

  • The estimated total time to make this recipe is 30-35 minutes.

  • Preheat oven to 425 degrees. Spray a medium size baking dish with non-stick cooking spray. Wash zucchini, and cut lengthwise, then into segments. Spray a large non-stick skillet over high heat. Add 1/4 cup water and zucchini, and cover for about 2 minutes

  • Drain any water off of zucchini, and spread out evenly over prepared baking dish. Pour pizza sauce over zucchini, spreading evenly with a spatula, and top with seasonings and parmesan cheese. Finish with turkey pepperoni’s.

  • Place baking dish in the oven and bake for 20 minutes, or until parmesan cheese is slightly browned. Enjoy warm!

  • 3 Medium zucchini
  • 1/2 c Pizza sauce (or tomato or spaghetti sauce of choice)
  • 1 tsp Italian seasoning 1
  • 1 tsp Garlic powder
  • Pinch Salt and Pepper (or to taste)
  • 1 pkt stevia (or sweetener of choice)
  • 1//8 cup Grated parmesan cheese
  • 12 Turkey pepperoni

  2. Preheat oven to 425 degrees. Spray a medium size baking dish with non-stick cooking spray. Wash zucchini, and cut lengthwise, then into segments. Spray a large non-stick skillet over high heat. Add 1/4 cup water and zucchini, and cover for about 2 minutes. Remove cover off of pan and stir until the water is evaporated, and zucchini is slightly softened, but not translucent or mushy.

  4. Drain any water off of zucchini, and spread out evenly over prepared baking dish. Pour pizza sauce over zucchini, spreading evenly with a spatula, and top with seasonings and parmesan cheese. Finish with turkey pepperoni’s.
