Ratatouille

Ingredients

  • 1 Tbsp. Extra Virgin Olive Oil
  • dash of red pepper flakes
  • 1 small organic onion, diced
  • 2 cloves garlic, minced
  • 1 small organic zucchini, diced
  • 5-6 organic white mushrooms, sliced
  • 1/2 organic red pepper, seeded and diced
  • 1 c. organic eggplant, chopped
  • 1/4 c. red wine
  • 2 c. Diced Tomatoes, canned
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/2 tsp. marjoram
  • sea salt
  • pepper

Directions

  1. Heat large saucepan over medium heat.

  2. Add oil, red pepper flakes, onions and garlic.

  3. Sauté 2 minutes.

  4. Add zucchini, mushrooms, red pepper and eggplant.

  5. Cook for 3 minutes.

  6. Add wine.

  7. Cover and cook 2 minutes longer.

  8. Stir in tomatoes, spices, salt and pepper.

  9. Cover and simmer for 15 minutes.
