Ratatouille vegetable wrap

  • 1 c. ratatouille, heated
  • 2 tsp. nonfat organic ricotta cheese
  • 1 tsp. Parmesan cheese, shredded
  • 1 tortilla
  • 1 organic red or green lettuce leaf, shredded


  1. Spread ricotta cheese on tortilla.

  2. Sprinkle with Parmesan cheese.

  3. Spoon ratatouille over cheese and top with lettuce.

  4. Fold tortilla into a burrito.
