Peanut Pattie’s

Ingredients

  • 3 C sugar
  • 1 C white corn syrup
  • 18 ounces raw spanish peanuts
  • 6-8 drops of red food coloring
  • 1 stick butter
  • 1/2 tsp vanilla
  • pinch of salt

Directions

  1. In a large 3 qt. saucepan, bring to boil sugar

  2. and corn syrup. When mixture begins to boil,

  3. stir in peanuts and food coloring. Cook until

  4. candy thermometer reaches 255 deg.

  5. Remove from heat.

  6. Add butter, vanilla and salt. Stir slightly to

  7. mix. Let mixture cool in pan for 8-10

  8. minutes. With a “wooden spoon”, beat

  9. quickly until it becomes light pink and creamy.

  10. It is important to beat long and hard. When

  11. it is creamy and almost hard, pour into a cookie sheet. Cool and break into pieces.
