Pan-Seared Catfish Po’Boys

Serves 4 people

Ingredients

  • 1 TBSP vegetable oil
  • 4 catfish fillets (about 1 1/2 lbs)
  • 2 Tsp. Cajun seasoning
  • 4 hoagie rolls
  • Remoulade Sauce (recipe follows)
  • 1 tomato, thinly sliced
  • shredded lettuce
  • Remoulade Sauce:
  • 1/2 cup mayonnaise
  • 1 1/2 TBSP sweet pickle relish
  • 1 TBSP mustard
  • 1/2 TBSP ketchup
  • 1/2 Tsp. Cajun seasoning
  • 1/2 Tsp. hot sauce

Directions

  1. In a large skillet, heat oil over medium heat. Sprinkle catfish fillets with Cajun seasoning. Add fish to skillet, and cook for 3-4 minutes per side or until fish flakes easily when tested with a fork.

  2. Spreak cut sides of hoagie rolls with desired amount of Remoulade Sauce. Top with catfish, tomato slices, and lettuce. Serve immediately.

  4. In a small bowl, combine mayonnaise, relish, mustard, ketchup, Cajun seasoning, and hot sauce. Cover and chill.
