Lemon Crumb Muffins

Ingredients

  • 6 c flour
  • 4 c sugar
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 8 eggs
  • 2c sour cream
  • 2 tbsp lemon juice
  • 3 tbsp grated lemon peel
  • Streusel: 3/4 c flour 3/4 c sugar 1/4 c cold butter
  • Glaze: 1/2 c sugar 1/3 c lemon juice

Directions

  1. In large bowl combine the flour sugar, baking soda and salt.

  2. In another bowl whisk the eggs, sour cream, butter, lemon peel and jucie. Stir in dry ingredients just until moistened.

  3. Fill greased cups 3/4 full.

  4. In small bowl combine flour, sugar cut in butter until mixture crumbles. Sprinkle over batter.

  5. Bake 350 20-25min. Cool 5min on wire rack.

  6. Whisk glaze ingredients drizzle over warm muffins.
