Slice n Bake Lemon Gems

Ingredients

  • 3/4 c butter softened
  • 1/2 c confectioner sugar
  • 1 tbsp grated lemon peel
  • 1c flour
  • 1/2 c cornstarch
  • 1/4 c non periels colored
  • Lemon Icing: 1 c confectioner sugar 2 tbsp lemon juice 1/2 tsp grated lemon peel

Directions

  1. In small bowl cream butter and conf sugar until light and fluffy. Beat in lemon peel. Combine flour and cornstarch gradually. Add to creamed mixture. Mix well.

  2. Shape into 1 3/4 diameter balls roll in non periels wrap in plastick wrap.

  3. Refrigerate 2-3 hours or until firt. Unwrap and cut into 1/4" slices. Place 1" apart on ungreased baking sheet.

  4. Bake 375 9-11 min or until set and edges are lightly browned. Cool 1 min.

  5. In small bowl combine icing ingredients spread over cookies roll in non pariels.
