Malai Kofta

Ingredients

  • This is what you will need:
  • For the koftas:
  • 1/4 cup crushed roasted cashews
  • 2 green chillies finely chopped
  • 5 strands of cilantro chopped
  • 1/2 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/4 tsp red chilli powder
  • about 2 cups of mashed veggies (I added 2 potatoes and 1 cup veggies which I pressure cooked with 1/2 cup water and drained the water. Keep the water for use)
  • 1/2 cup of grated paneer
  • 2 tbsp cornflour
  • salt to taste
  • Oil to deep fry
  • For the sauce:
  • 2 + 2 tbsp oil
  • 1 onion finely chopped
  • 2 tomatoes finely chopped
  • 1/2 cup roasted crushed cashews
  • 1 tbsp ginger garlic paste
  • 1/2 tsp shahi jeera
  • 3/4 tsp coriander powder
  • 1/4 tsp cumin powder
  • 3/4 tsp red chilli powder
  • 1/2 tsp turmeric
  • 1 1/2 cup water
  • 1/2 tsp tomato ketchup
  • 1/4 tsp garam masala
  • 1/4 cup grated paneer
  • 1/4 cup creme
  • 5 strands of cilantro to garnish
  • salt to taste

Directions

  1. Take the mashed veggies and paneer in a cheesecloth or a muslin cloth and squeeze out as much water as you can. Keep the drained water aside. To this mashed veggies add the crushed cashews,chopped chillies,dhania powder,jeera powder ,chilli powder,chopped cilantro and salt.Mix well. Then make round balls and keep aside (If at all your kofta is not holding shape then add bread crumbs to the veggie mix till you get the desired consistency). Deep fry this over a medium flame till it gets a nice brown color.Keep this on a paper towel so that excess oil is absorbed.

  2. In a pan add the 2 tbsp oil and once its hot add the onion , a little salt and let it cook till light brown. To this add ginger garlic paste,turmeric tomatoes,coriander powder,cumin powder and red chilli powder. Let this cook till the oil separates. Then transfer all this to blender and make a fine paste with 1 1/2 cup of water. Keep aside.

  3. To the same pan add 2 tbsp oil and once hot add the shahi jeera and the above paste and the tomato sauce.Let this cook and come to a boil. Then add creme and let it boil once again. Add in the cashew powder,garam masala and paneer and slowly drop in the koftas. Adjust the salt and garnish with cilantro.Immediately take this off the stove and serve hot with rice or roti or naan.
