Shahi Jeera Pulao

Ingredients

  • 2 cups cooked cooled rice
  • 4 ybsp oil
  • 1 tbsp shahi jeera
  • 1 tbsp sugar
  • 1 onion thinly sliced (cut longitudinally)
  • 1 tbsp ginger garlic paste
  • 2 green chilled sliced
  • 3/4 cup mint leaves chopped roughly
  • 1/2 cup cilantro chopped roughly
  • salt to taste

Directions

  1. In a pan add the oil and once its hot add the shahi jeera and let it sizzle. Then add the sugar and let it caramelize (it should melt away ).Then add the onions and the cook them till they lightly change color or are translucent.

  2. Add the ginger garlic paste and mix well.Follow by adding the green chilles. Let this cook for a minute. Then add the mint and cilantro leaves. Give this a quick mix and do not cook this for more than 30 secs.

  3. Mix in the rice and adjust the salt. Serve hot
