Parval Subzi (Potol/pointed gourd/Trichosanthes dioica)

Ingredients

  • 4 cups of washed cut parval or potol
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 1/4 tsp jeera
  • 3 pods of crushed garlic
  • 1 1/2 tbsp chili flakes (add more if you want it spicy)
  • salt to taste

Directions

  1. Microwave the washed cut parval with 1/4 tsp salt for 4+5 minutes. Keep aside

  2. In a pan add the oil and once its hot add the mustard seeds and jeera. Once they pop add the crushed garlic. Give this a nice mix and then add the microwaved parval.Sprinkle the chili flakes and mix. Adjust the salt and let this cook covered for another 5 minutes on medium heat.

  3. Serve hot with rotis or rice
