Snake Gourd curry

Ingredients

  • 2 snake gourds (washed,cut into bite size pieces and microwaved with 1/4 tsp salt for 4+4 minutes)
  • 4 tbsp channa dal soaked for 4 hours
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • pinch of hing
  • 4 curry leaves
  • 1/4 tsp turmeric powder
  • 1/2 onion finely chopped
  • 2 chillies finely chopped
  • 2 tbsp grated coconut
  • salt to taste
  • cilantro and dash of lime for garnish

Directions

  1. In a pan add oil.Once its hot add the mustard seeds and let it pop.Follow it by adding hing,curry leaves,turmeric powder,chillies and finely chopped onion with a pinch of salt. Saute this for 30 secs. Then add the soaked ,drained channa dal and cook covered for 2-3 minutes on a med-low flame.

  2. Do a taste test and see if the channa dal is cooked. Once its cooked add the microwaved snake guard. Toss and mix well. Let this cook for about 5 minutes. Then add the grated coconut and adjust the salt. Garnish with cilantro and a dash of lime.

  3. Serve hot with rotis
