Amrakhand (Mango Shrikhand)

Ingredients

  • 32 oz (500 ml) youghurt
  • cheesecloth or sieve lined with paper towels
  • 1/4 tsp freshly ground cardamom
  • pinch of saffron
  • 1/2 cup of sliced almonds or a combination of almonds and pistachios
  • 4 tbsp mango pulp
  • 12 tsp sugar (this can be adjusted if you want it sweeter)

Directions

  1. Hang the yoghurt in a cheese cloth or alternatively line a sieve with paper towel and let the excess water drain overnight.This will result in thick yoghurt the next day. Put this is a bowl

  2. To the yoghurt add saffron,sugar,cardamom ,mango pulp and mix well with a spoon till everything is well incorporated. Adjust the sugar if you want it sweeter.

  3. Garnish with almonds and refrigerate. Serve chilled and enjoy the mango shrikhand.
