Oatmeal Rasin Muffins

These muffins are soft, moist, and not overly sweet.

Serves 6 people

Ingredients

  • 1 1/4 cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup uncooked rolled oats
  • 1/2 cup raisins
  • 1 egg
  • 1 cup milk
  • 1/3 cup oil

Directions

  1. Mix flour, baking powder, salt, and oatmeal together. Stir in raisins.

  2. Separately, beat egg, then add milk and oil. Add to flour mixture.

  3. Stir just until dry ingredients are wet, leaving batter lumpy.

  4. Bake at 400 degrees for 20-25 minutes.

  5. Makes 12 muffins.
