  • Onion
  • Garlic
  • Can of diced tomatoes
  • Mushrooms
  • Zucchini slices
  • potato slices
  • eggplant
  • carrots
  • olive oil
  • Bechamel
  • Romano cheese


  1. Preheat oven to 400 degrees

  2. In a pot, brown sliced onions and garlic

  3. Add mushrooms, then diced tomatoes

  4. Place some olive oil in a baking pan and add zucchini, potatoes, eggplant and carrots.

  5. Drizzle with more oil

  6. Bake about 20-30 minutes, stirring occasionally.

  7. Pull out of oven and sprinkle with grated cheese.

  8. Pour sauce on top and mix together.

  9. Sprinkle bread crumbs on top of casserole.

  10. Top with bechamel. Add more grated cheese and bread crumbs. Top with pieces of butter, then return to oven and bake at 350 for about 45 minutes.
