Lettuce Wraps

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup peanut butter
  • 1/2 tablespoon molasses
  • 1/2 cup rice vinegar
  • 4 teaspoons sesame oil
  • 1 teaspoon hot sauce
  • 1 teaspoon cornstarch
  • 1 teaspoon water, cold
  • 2 tablespoons sugar
  • 1/8 teaspoon pepper
  • 1 pound lean ground turkey
  • 1/2 cup carrot, shredded
  • 1/2 cup spinach, chopped
  • 1 cup mushrooms, chopped
  • 2 tablespoons ginger, minced
  • 4 garlic cloves, minced
  • 1 can water chestnuts, drained and chopped
  • 4 green onions, chopped
  • 1 cup snow peas, chopped
  • 1 head lettuce, washed and divided into leaves

Directions

  1. Mix sauce: In a small saucepan over low heat, combine ingredients (soy sauce through pepper). Let simmer, stirring frequently, until sauce thickens and bubbles.

  2. In a large skillet, cook turkey and carrot over medium heat until meat is no longer pink and carrot is tender; drain. Add ginger, garlic, spinach, and mushrooms; cook till mushrooms are cooked.

  3. Stir in the chestnuts, green onions, snow peas, sauce; heat through. Divide among lettuce leaves. Fold lettuce over filling.
