Chicken Rice Bowl

Ingredients

  • 1 cup uncooked instant rice
  • 1 cup chicken broth
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onions
  • 2 t. olive oil
  • 1 pkg. ready-to-serve grilled chicken breast strips
  • 1/2 cup frozen corn, thawed
  • 1/2 cup frozen peas, thawed
  • 1 t. basil
  • 1 t. sage
  • 1/8 t. salt
  • 1/8 t. black pepper

Directions

  1. Cook rice according to package directions using broth instead of water.

  2. Meanwhile, in a large skillet, sauté green pepper and onion in oil for 2-3 minutes or until tender-crisp. Stir in the chicken, corn, peas, basil and sage.

  3. Cook, uncovered for 4-5 minutes over medium heat or until heated through. Stir in the rice, salt and pepper.
