Farmer’s Market Chicken Skillet

Ingredients

  • 1/2 lb. linguine
  • 6 small chicken breast
  • 1/2 tsp black pepper
  • 2 TBSP olive oil
  • 3 zucchini, sliced
  • 3 yellow squash, sliced
  • 4 garlic cloves
  • 1 1/2 cups shredded cheese
  • 1/4 cup fresh basil
  • 1/4 cup Parmesean

Directions

  1. Cook pasta

  2. Sprinkle chicken with pepper.

  3. Heat 1 TBSP oil in large skillet on medium heat

  4. Add chicken; cook 5-7 min on each side

  5. Remove and cover to keep warm

  6. Add rest of oil to skillet. Add squash and zucchini and stir fry 3 min

  7. Add garlic and stir fry 3 more minutes

  8. Drain pasta, reserve 1/4 cup water

  9. Toss pasta with reserved water in same pan

  10. place pasta on plate and top with chicken, squash and remaining ingredients
