Zapatos Rellenos

“What will I do with all this zucchini?”

Ingredients

  • 1 Zucchini per person
  • grated cheese (any kind)
  • clove or two of garlic
  • chopped parsley
  • butter

Directions

  1. Cut zucchini in half lengthways, leaving the ends in place. Scoop out the seeds and fleshy inside being careful not to cut through the skin. Put flesh in a colander with a little salt and leave to drain.

  2. Press to expel excess liquid and chop flesh finely. Add crushed garlic, parsley and cheese.

  3. Melt a little butter and add half to the mixture.

  4. Stuff the shells with the mixture and pour over the rest of the butter.

  5. Bake in the oven at 350F for about 45 minutes or until top is browning.
