Chicken & Dumplings Clark Southern Style

Ingredients

  • 4 chicken breasts
  • 2 t. onion powder
  • 2 t. salt
  • 1 bay leaf
  • 6 peppercorns
  • 1 carrot, sliced
  • 2 eggs
  • 1 t. salt

Directions

  1. Cook chicken in 4-5 cups water with the next 5 ingredients until tender. Cool. Shred chicken; drain broth. Return chicken to strained broth in pan.

  2. For dumplings, beat eggs with salt. Gradually add 1 1/2 cups hot broth. Mix in enough flour to keep from sticking to a dough board. Roll out and slice into strips.

  3. Heat chicken and broth to boiling; add dough strips. Simmer until dough is cooked and broth is thickened.
