Enchilada Casserole

Ingredients

  • 1 1/2 lbs. ground beef
  • 1 pkg. dry enchilada sauce mix
  • 2 10-oz. cans mild enchilada sauce
  • 1 8-oz. can tomato sauce
  • 8 flour tortillas
  • 1 12-oz pkg. shredded cheddar cheese
  • TOPPINGS:
  • sour cream
  • chopped tomato
  • chopped green pepper
  • black olives
  • salsa

Directions

  1. Brown meat and drain. Mix with dry enchilada sauce mix, enchilada sauce and tomato sauce.

  2. Layer in a 9×13 pan:

  3. 1/3 sauce

  4. 1/2 tortillas

  5. 1/3 cheese

  6. repeat ending with cheese

  7. Bake at 350 degrees for 45 minutes. Let stand 5 minutes before serving.
