Green salad with prosciutto shards

Ingredients

  • 4 slices prosciutto
  • 1 egg
  • 1 garlic clove
  • juice of 1/2 lemon
  • 1 tsp Dijon mustard
  • 50g Parmesan, grated
  • 150ml olive oil
  • 1 large cos lettuce, leaves torn

Directions

  1. Preheat the oven to 190˚C/fan 170˚C/gas 5. Put the prosciutto on a tray lined with baking paper and bake for 8-10 minutes or until crisp and golden. Remove it from the oven, allow to cool down, and then break it into shards.

  2. Put the egg, garlic, juice, mustard and half the Parmesan in a food processor and briefly blend. With the motor still running, slowly pour in the olive oil to make a thick emulsion.

  3. Drizzle this over the lettuce leaves in a serving bowl, and toss well to coat everything. Finally, scatter over the prosciutto and Parmesan.
