Best Black Bean Soup

Serves 4 people

Ingredients

  • 2 16 oz cans black beans, undrained
  • 14.5 oz chicken or vegetable stock
  • 1/2 cup salsa
  • 1 tbsp chili powder
  • Juice of one lime
  • 1/2 cup sour cream
  • 1 small onion, diced fine
  • Minced cilantro
  • Shredded cheddar cheese

Directions

  1. Pour beans into a medium saucepan, and with a potato masher, mash until beans are approx 50% broken down.

  2. Add stock, salsa and chili powder, bring to a boil and simmer for 15 min. Add the lime juice.

  3. Serve the sour cream, onion, cheese and cilantro in small bowls for garnish.
