Grilled Romaine with Blue Cheese Bacon Vinaigrette

Ingredients

  • 4 T. olive oil
  • 3/4 cup finely diced red onion
  • 1/2 lb. bacon
  • 1/2 cup balsamic vinegar
  • 3 romaine heads, cores remove, leafy ends trimmed, cut in 1/2 lengthwise
  • 1/2 cup blue cheese
  • fresh ground black pepper

Directions

  1. Heat 1 tablespoon olive oil in skilled. Add onion and bacon; cook until bacon is crispy. Remove from pan.

  2. Add vinegar and 1 tablespoon olive oil. Reduce for 2-3 minutes.

  3. Brush romaine with 2 tablespoons olive oil. Place cut side down on grill. Sear until grill marks are visible.

  4. Place lettuce on plate; drizzle with balsamic dressing. Sprinkle with bacon, onion, fresh ground black pepper and blue cheese.
