Soda bread with smoked salmon and horseradish crème fraîche

Ingredients

  • 400g soda bread loaf
  • 6 tbsp olive oil
  • 2 tbsp horseradish sauce
  • 200ml tub crème fraîche
  • 400g sliced smoked salmon
  • 2 tbsp snipped fresh chives

Directions

  1. Cut the bread into 12 slices, then halve. Heat 2 tablepsoons of the oil in a large frying pan and gently fry the bread in batches – adding extra oil for each batch – for 2-3 minutes until brown on each side. Season with salt and put on a wire rack to cool.

  2. Mix the horseradish sauce with the crème fraîche. Put a slice of salmon on top of each bread slice, add a spoonful of horseradish crème fraîche and garnish with chives.
