Country Chicken Pot Pie

Serves 8 people

Ingredients

  • 1 1/2- 2lbs cooked chicken (dark and white meat)
  • 4 TBSP Canola Oil
  • 4 TBSP Flour
  • 1 1/2 cans chicken stock (about 2 cups)
  • 1 tsp Dijon Mustard
  • Salt and Pepper
  • 30oz Peas/Carrots/Corn
  • 1 pkg Refrigerated Pie Crusts

Directions

  1. Mixed oil and flour together to make paste. Let bubble for few minutes.

  2. Whisk in chicken stock. Add Mustard. Season with Salt and Pepper.

  3. Add Chicken and Vegetables. Heat through.

  4. Place pie crust in pie pan. Fill with Chicken Vegetable Mix.

  5. Place remaining pie crust on top. Puncture crust several times.

  6. Cook at 425 for 10 min. Turn oven down to 350 and cook for 30 min.
